Healthier Gluten Free Coconut Waffles

Rise and shine with this delicious gluten free coconut waffle recipe. It’s super simple to put together with just a few ingredients. My kids love waffles for breakfast but I try not to make them very often because it's so unhealthy. This gluten free coconut waffle recipe is healthier than regular waffles so you don't have to feel too guilty feeding your family.

Why I love this coconut waffle recipe
These coconut waffles have no added sugar.
I use Califia Farms Toasted coconut almond milk blend in this waffle recipe because it gives waffles a hint of coconut flavor, but feel free to use milk of your choice.
I use Bob's red mill gluten free 1-to-1 baking flour. It's a great substitute for regular flour if are following gluten free diet.
For toppings, I like using organic maple syrup or even pure honey paired with a variety of fruits and berries.

Healthier gluten free coconut waffle recipe
Ingredients
2 Eggs large
1 ¾ Cups Califia Farms Toasted Coconut Almondmilk blend
2 Tbsp Butter melted
2 cups Bob’s red mill gluten free 1-to-1 baking flour
1 Tbsp Baking powder
½ Teaspoon Vanilla extract
Directions
Preheat waffle iron to medium high heat.
In a large bowl, whisk together the eggs, milk, melted butter and vanilla extract until combined.
Whisk in the flour and baking powder until combined.
Spray the preheated waffle iron with non-stick cooking spray. Pour batter into waffle iron. Cook until golden brown.
Serve hot with your favorite toppings.
