Chakhokhbili is a traditional Georgian chicken stew with tomatoes and cilantro. This Chakhokhbili recipe is ready in about an hour and makes a healthy and delicious one pot dinner that the whole family will enjoy.

Growing up in Tbilisi, Georgia, I remember Chakhokhbili was a common dish that every family would make for dinner at least once a week. Chakhokhbili is the ultimate Georgian comfort food that I often make at home as well. The main ingredients of Chakhokhbili are chicken, onions, tomatoes and cilantro. Chakhokhbili is a simple but hearty and flavorful dish that you will be making over and over. I can proudly say I can make this Chakhokhbili recipe with my eyes closed.

Originally, Chakhokhbili was made with pheasant, hence the name. Khokhobi - meaning pheasant in Georgian language. Nowadays, Chackhockhbili uses a whole, cup up chicken, but you can also use chicken thighs, chicken leg quarters or cubed chicken breast.

Tips to make Chakhokhbili taste amazing

  • One of the most important steps for making an amazing Chakhokhbil is using a lot of onions. I mean A LOT. At least 3 lbs or more. As a rule, the more onions, the better. In fact first thing I do when I want to make Chakhokhbili is check if I have enough onions available.

  • Also, I highly recommend slicing onions lengthwise instead of chopping them . Sliced onion retains more volume when its cooked and doesn't "disappear" in Chakhokhbili like chopped one.The good thing about this Chakhokhbili recipe is that you can use any type of onion you have available.

  • Another very important step in making authentic Chakhokhbili is not to remove chicken from the pot after browning. Chicken and onions have to cook together until onions are soft. After all, Chakhokhbili means stewed pheasant in Georgian language. Moreover, stewing chicken and onions together give Chakhokhbili its distinctive mouthwatering flavor.

  • Additionally, I'm using canned crushed tomatoes but fresh chopped tomatoes work great in this Chakhokhbili recipe as well. You will need about 3 lbs fresh tomatoes.

Authentic Chakhokhbili - Georgian Chicken Stew


  • 1 whole chicken, cut up, skin-on, bone-in.

  • 4 tablespoon olive oil

  • 5-6 onions, sliced, lengthwise

  • One 28 oz can crushed tomatoes or 3-4 lbs fresh tomatoes, chopped

  • 1 chili pepper, chopped

  • 1 cup cilantro, chopped

  • Salt and black pepper to taste


  1. In a dutch oven or a large pot, brown chicken over medium heat.

  2. Add sliced onions and olive oil to the chicken, cook until onion is soft, stirring frequently.

  3. Add .crushed tomatoes, chopped chili pepper. salt and black pepper.

  4. Stirring occasionally, cook over low medium heat for about 30 minutes or until chicken is cooked through.

  5. Remove from heat, stir in chopped cilantro.

  6. Serve hot.
